First established in 2016 at The Rail Mall, the restaurant has been delighting diners with its authentic Italian fare, brought to life by two seasoned chefs—Antonio Manetto from Naples (Southern Italy) and Roberto Galbiati from Milan (Northern Italy). At the heart of Acqua e Farina’s philosophy is a commitment to the simplicity of flavours and the use of high-quality ingredients. The restaurant’s name, which translates to “water and flour” in Italian, reflects this ethos—emphasizing the basics that form the foundation of Italian cooking. From their twice-cooked pizzas to handmade pasta, every dish showcases the chefs’ dedication to authenticity, with many ingredients flown in directly from Italy twice a week.

For instance, the Montanara, a twice-cooked pizza hailing from Naples, is a highlight of the menu. The dough, which rises for 36 hours, is first deep-fried and then baked to perfection, resulting in a light and crispy base topped with tangy tomato sauce, savory pork sausages, spicy ‘nduja salami paste, and creamy buffalo cheese.
Another standout is the Risotto ai Ricci di Mare e Bottarga, a luxurious dish that combines creamy risotto with the umami-rich sea urchin broth and the briny bursts of sun-dried, salt-cured bottarga.
For something more adventurous, diners can try the Tagliatelle al Cacao con Gamberetti e Nduja, where handmade cocoa pasta is tossed in a sauce of portobello mushrooms, tender shrimp, and spicy nduja salami paste for a truly unique flavor experience.
The menu also features dishes like the Tegamino con Cipolle, Asparagi e Guanciale, where sweet braised onions, fresh asparagus, and crispy guanciale come together in a rich and savory combination that leaves a lasting impression.
