Yang Guo Fu continues its expansion in Singapore with their latest outlet in Plaza Singapura, located at #B2-52/54. This is their most central outlet to date, with their other stores being in Northpoint City, Esplanade Xchange, SingPost Centre and Bugis Street.
For those unfamiliar with Yang Guo Fu, they offer three best-selling broth bases—Spicy Mala Beef Broth, Tomato Broth and Mala Ban, which is not a soup but instead a dry tossed sauce variant where a Mala sauce will be served alongside your cooked ingredients.
To order your food, you pick the ingredients you want from their fridge. Your meal is charged by weight at $2.98/100g, and all the available ingredients—meat, seafood or vegetables—are all charged according to this same pricing!
We love the premium ingredients available, especially the range of fresh seafood including prawns, scallops, squid and octopus. The meats on offer include assorted cuts of chicken, pork, lamb and beef, some processed meats and a variety of gourmet balls. To finish off this range of over 60 premium ingredients, there are many types of vegetables and noodles available too.
Aside from the big ticket meat and seafood ingredients, we recommend you to not miss out on Yang Guo Fu’s specially produced noodles, which are made to be chewy and not go soft as quickly as normal noodles. They also offer a freshly-made tofu similar to tau kwa—the store shared with us that this tofu recipe was specially brought over from China, and a local producer was found so they could make it fresh daily for their Singaporean outlets.
We tried Yang Guo Fu’s signature Spicy Mala Beef Broth, which is a collagen-rich, creamy soup base. We could customise the spice level so we chose “xiao la”. When we tasted the soup, it had a decent tongue-numbing effect despite being the lowest level of spice, so Singaporeans don’t think you need to level up just to get an authentic mala experience!
We also got a bowl of noodles with the Tomato Broth base, and it did not disappoint with its delicious tangy flavour. There was a rich thickness to the soup despite it being a lighter and healthier choice, making it a delight to eat.
Aside from these two soups, Yang Guo Fu also offers Mala Ban, which is a dry tossed variant. If you order this, your food will arrive as a bowl of cooked ingredients with a mala sauce on the side, which you can then pour over your food and toss together. This sauce also has a customisable spice level. While we did not try this as a dish, we sampled the Mala Ban sauce and found it very aromatic and flavourful.
If you want to add an extra dimension to your dining experience, Yang Guo Fu has a sauce station where you can create your own dips. Try out their Sesame Dip, which is blended in-house and will mellow out the heat from all the mala flavours.
