Farming is often extremely harmful to the environment: it disrupts the surrounding ecosystem, depletes the nutrients in the land, introduces chemicals and pollutants into the environment, and much more.

To combat this, some farmers have begun practising regenerative agriculture—a conservation and rehabilitation approach that prioritises the health of the ecosystem, aiming to not only sustain the current state of the environment but also actively heal and regenerate it!

Top Quality Beef That Restores The Environment

Roots Regenerative offers beef produced by Australian regenerative farmers according to a specific set of farming principles, resulting in a product that’s 100% grass-fed, free range, antibiotic free and added hormone-free!

Roots Regenerative beef also had a reduced carbon footprint thanks to sustainable farming practices like planned cattle grazing. It creates a healthier ground cover (the grass covering the paddocks) which aids soil carbon sequestration—a process where carbon dioxide is removed from the atmosphere and stored in the soil. As you can imagine, this reduces the amount of carbon in the atmosphere, allowing the beef from these cattle to have a reduced carbon footprint!

Roots Regenerative Beef Tasting

We tasted various cuts of beef from Roots Regenerative, prepared in a variety of ways by the chefs at Yardbird. All the beef we tried was sourced from Willacora in Western Queensland—the fact that we knew exactly where our meat came from is a true testament to the level of accountability that Roots Regenerative holds!

These dishes are not for sale, and were for a media tasting hosted by Roots Regenerative.

We started off with the Beef Tenderloin Tartare, which showcased the natural freshness and quality of the beef. The flavour was mild and rich, without any of the gamey taste you may expect from lower-quality meat. The meat was also tender and delicate, making it a delicious beef tartare!

We enjoyed the tartare on a slice of brioche toast, accompanied by mustard, pickled cucumber, potato gaufrette and quail egg.

Next was the Double Cheeseburger, made with Roots Regenerative’s minced beef. The patty was simply seasoned with salt and pepper, again letting the natural flavour of the meat shine through.

The Roots Regenerative team shared with us that the mince is a classic blend of 80% meat and 20% fat, creating a patty that’s juicy and succulent but not too fatty or oily.

Braised Oyster Blade

Oyster blade is a cut of beef from the shoulder that’s typically very flavourful. This cut still has the tendon running through it, which was deliciously rich after the meat was braised. As another testament to the quality of Roots Regenerative’s beef and the skill of the chefs at Yardbird, the meat was fall-apart tender without being dry or stringy!

The final dish of the day was a grand Slow Roast Tomahawk! The chef at Yardbird carved and torched it live for us, and it was an impressive sight.

After the carving, we were served our final tasting dish of the day.

This was another dish that let the natural flavour of the meat be the star. It was beefy and flavourful without being gamey, and with a sprinkling of sea salt flakes on top, it was great!
