WOKE Ramen | New Wok Hei Laden Lamian With Smoke-Kissed Savouriness

When getting dishes from a zi char stall, one may judge a chef’s skills by the amount of wok hei they are able to incorporate into the dish. Here at WOKE Ramen, enjoy a smoky savouriness in their lamian that packs a delicious punch at Changi Airport T1 Viewing Mall Central (#03-19).

Instead of incorporating their wok hei into the soup, the noodles are first stir-fried in a seasoned Asian bowed wok that singe them just right for that prized wok hei. Next, the noodles are served with either a creamy Chicken Collagen Broth or an umami-filled and concentrated Prawn Broth then topped with delicious toppings.

Chicken Chashu Collagen Ramen

The Chicken Chashu Collagen Ramen ($13.90) may look like the standard ramen you can get at your usual ramen place served with grilled chicken chashu, onsen egg, black fungus and spring onions, but don’t let its simple look deceive you.

Made by simmering chicken bones and cartilage for many hours, the creamy collagen broth helps bring out the smokiness of the noodles without being overly jelak or heavy after eating. For a little more kick, add on their homemade chilli that adds more depth to the overall dish.

Seafood Mix Prawn Ramen

If you prefer a standout dish, why not give their Seafood Mix Prawn Ramen ($18.90) a try? Served with tiger prawns, scallops as well as their prawn paste balls, their sweet and umami laden broth was so rich and good that it felt as though we were having a plate of stir-fried hokkien mee that has been liquefied for ease of consumption (we kid you not).

Paired with fresh ingredients alongside the runny onsen egg, black fungus and spring onions, this is the dish we highly recommend you try if you only have space for one ramen on the menu!

 With a variety of different toppings such as Prawn Paste Balls, Chicken Chashu, Fried Chicken Katsu or Chicken Gyoza that comes with their noodles, you can also top up $5.50 for an additional side and drink to complete your meal.

 Take your pick from deep fried Chicken Karaage ($4.50), crispy Golden Beancurd Skin ($3.50), Mentaiko Fries ($4.50) or Five Spice Beancurd ($3.50) for something sweet and savoury. Fried WOKE Gyoza ($4.50 for 6pcs) or boiled Hot & Spicy Bean Dumplings ($5.50) drizzled in WOKE’s signature hot and spicy sauce is also available. Drinks ($3.00) also come in options of Coke, Sprite, ice Lemon Tea and Green Tea, iced and hot.

In celebration of WOKE Ramen’s first store opening at Changi Airport Terminal 1, it will be running a 1-FOR-1 promotion on all Ramen from 28 February to 2nd March 2023! Limited to the first 100 bowls daily, this is the best time to jio your friends for a delicious meal as you plan or wait for your next flight.
