Wagatomo is excited to announce their updated omakase menu to welcome the arrival of spring. The seven-course menu is designed to highlight the natural goodness of the fruits, vegetables, meats, and seafood without being overly complicated.
The Spring 2023 Omakase menu is priced at $96 per person, with a minimum of two guests required to share, and will be available from March 6th, 2023 onwards.
Maguro & Green Pea | Individual dish (spicy tuna, ohba, amazu)
The meal starts with two delectable tartlets. One is crowned with a delectable combination of fiery tuna sashimi, togarashi aioli, sesame seeds, and finely sliced negi. The second tartlet is a Japanese take on the French Petit Pois, with green peas sautéed with amazu and served on a bed of green pea purée, topped with Japanese perilla leaf.
Tomato 3 Ways | Sharing Dish ( Tomato Houjicha Consommé, Tomato Jelly and Marinated Tomato)
This recipe highlights the perfect combination of sweet, sour, and umami tastes found in heirloom tomatoes. It consists of marinated tomatoes in amazu and sliced tomato jelly prepared from tomato water, served with houjicha-infused tomato consommé.
The outcome is a clean and pure tomato flavor that needs only a simple garnish of micro herbs to entice tomato lovers with a refreshing taste. These tomatoes are rich in vitamin C and have a low calorie content, making the dish appetising and nutritious at the same time.
Maguro Tataki | Sharing (Tataki Soy, Pickled Ginger Flower, Negii)
Indulge your taste buds with the next dish, featuring lightly torched fresh maguro slices drizzled with a savory sauce made from vinegar, soy, and sugar. The dish is then topped with shredded pickled ginger flower, negi, and garlic chips, providing a burst of contrasting tastes and textures that will leave your palate wanting more.
Maguro refers to albacore tuna in Japanese. It’s a smaller species of tuna often served as sushi and sashimi. The dish has a fairly firm texture, but tender and easy to chew. It has a mild, savory flavour with a bit of sourness on the finish.
Haru Kakiage | Sharing (Bamboo Shoots, Asparagus, Onion, Burdock, Prawn Tempura )
The crispiest spring vegetables including asparagus, bamboo shoots, burdock, onions and carrots are brought up a notch in this classic vegetable tempura mixed with diced prawns. Served with a tentsuyu sauce, carefully made from dashi, mirin and soy for incomparable flavours, these crunchy discs are a true delight for the taste buds and a must-try for anyone looking for a flavorful and satisfying meal.
Saba Shio Yaki | Sharing (Grilled Saba, Daikon Oroshi)
Spring treasures of the sea comes in the form of Japanese saba mackerel from Fukuoka, seasoned with coarse grain salt and grilled over prized binchotan charcoal to perfectly crisp the thin skin. To bring out the sweetness of the fish further, pair it with the side serving of yuzu zest mixed with grated daikon for more flavours.
Beef and Negi | Sharing ( Brown Butter Negi, Potato Puree, Hazelnuts )
Indulge in Wagatomo’s signature beef, which uses the chuck roll of Kamichiku 4% Miracle Gyu, grilled at the perfect consistency and sauteed in brown butter. The beef has a melt-in-your-mouth texture while the potato puree is buttery, perfectly seasoned, and impossible to resist while eating especially for potato lovers.
Baked Ringo | Sharing (Apple Pie Filling, Apple Gel , Apple Sorbet )
To end the meal on the sweet note, apple pie chutney is encased within a baked apple and topped with a refreshing green apple sorbet to cleanse the palette. The dessert is adorned with playful apple gel droplets and a dehydrated candied apple for added sweetness while a sprinkling of hazelnut adds a fragrant and nutty dimension to the dish, bringing all the elements together.
