This fall, Sushi Tei is set to unveil an unforgettable culinary experience with their new seasonal menu, Aki. Delving into the depths of Japan’s time-honoured culinary tradition, three exceptional ingredients take the spotlight: Arita Wagyu, Cherry Hirame, and Engawa.
The Arita Wagyu, imported from Miyazaki Prefecture has a harmonious distribution of fat that imparts an ethereal flavour.
These exceptional cattle are nourished with a carefully curated diet comprising ten different grains and four varieties of self-cultivated pasture grasses, with further hydration from the pristine waters of Mount Osuzu.
The A4 grade chuck roll is showcased in the Arita Wagyu Saikoro Don ($28.80), where it is cubed, pan-seared and served with a savoury sauce.
This delectable beef is accompanied by fluffy rice tossed with garlic, spring onion, and edible star flower petals.
Hailing from a fish farm on the enchanting Iki Island in Nagasaki Prefecture, the Cherry Hirame derives its unique flavor from a diet enriched with cherry powder and extracts.
This fish is a nutritional powerhouse, packed with iron and vitamins. Savor the Cherry Hirame Sashimi ($20.80) to experience its remarkable freshness and subtle sweet-tangy contrast.
Another must-try ingredient is the Engawa, sourced from the tail fin muscles of a flounder. With a satisfying mouthfeel and an intensifying flavor profile, it is a rich source of protein and omega-3 fatty acids.
The Engawa Unagi Chirashi Don ($16.80) showcases torched halibut fin complementing glazed premium eel, while superfood avocado adds creaminess and a nutty undertone.
The Renkon Lobster Salad Roll ($14.80) offers tantalizing lobster salad atop each block of eel and cucumber sushi roll, garnished with sliced fried lotus root for a visually stunning presentation.
Additional delights on the menu include the Maitake Tempura ($7.80), known in Japan for its healing properties and rich in antioxidants, vitamins B and C, and amino acids.
For a fusion of East and West, indulge in the Truffle Okonomiyaki ($9.80), a hearty savory pancake featuring squid and wheat flour batter elevated with aromatic truffle paste and a drizzle of mayonnaise.
To complement this culinary journey, sip on the refreshing Momo Sparkling Jelly Sake ($6.80), a unique liqueur with a 3% alcoholic strength and a jelly-like texture, featuring a delightful fizziness and sweet peach notes.
