First-Of-Its-Kind New Gyu San Charcoal Bar Opens In Orchard

After their successful juicy melt-in-your-mouth Japanese wagyu katsu sandos in Tanjong Pagar, Gyu San now unveils a new concept Gyu San Charcoal Bar. 

It is the first of its kind in Forum at Orchard Road for a fresh way to enjoy wagyu.

Wagyu hamburgs are carefully made from the ball to the patty in front of you and cooked within a minute over binchotan charcoal at an open concept island charcoal bar.

The new hamburgs, cooked to juicy perfection over a binchotan grill, paired well with rice and an optional onsen egg.

First to be served from the grill station is the  A5 Wagyu Japanese Hamburg Set ($23.80++).

Two 90gram wagyu patties prepared from freshly grounded wagyu daily. The hamburgs are grilled until the perfect char before being served on a personal mini grill to keep the patties warm.

Served alongside the patties will be a hearty miso soup, Gyu San salad and the most prestigious South Uonuma Koshihikari rice from Niigata, Japan. Gyu San Charcoal Bar works with its supplier to ensure that the rice is polished toorder, ensuring its freshness, fragrance and quality

Additional orders of A5 Wagyu Japanese Hamburg are available for $8.5 per order.

How To Savour The Patties

Savour the patties in two parts. The first, completely on its own to truly enjoy the natural flavours of the beef. 

The second, they can be tasted with eight different accompaniments to your personal liking, from traditional yuzu kosho to local Singaporean sambal.

Gyusan Wagyu Skewer

Smoky and succulent Wagyu skewers, grilled to perfection over the prized Binchotan charcoal, these skewers offer a tantalising combination of flavours.

Delectable vegetable sides (starting from $2.50++) – Shiitake, Kabocha, Shishito, Asparagus, Enoki & Beef, and Baby Cornskewers. 

In addition, there are Cold Pickled Cherry Tomatoes and Cold Pickled Cucumbers that provide a delightful burst of flavour.

Japanese Rustic Charm Meets Modern Minimalism

Gyu San Charcoal Bar boasts a warm and inviting ambiance with raw wood accents, textured concrete walls, and neutral colour palette culminating into a cosy atmosphere.

Gyu San Sando with Specialty Coffee

Expanding from the original Gyu San Butchery & Sando outlet at Guoco Tower, diners can look forward to Gyu San Sando in Orchard. Gyu San Sando continues to source all its Japanese wagyu directly from Japan. 

Gyu San Sando boasts anewfixed steak menu featuring the most prime cut such as the tenderloin (200 gram for $160++), ribeye (250 gram for $140++) and a medley of cuts of the day (250 gram for $120++), each prepared with Japanese precision over the teppan. 

The 42-seater facing Orchard Road also serves coffee all-day-long, making it the perfect spot for a caffeine fix any time of the day. The brew is a rich and robust profile with notes of roasted nuts and dark chocolate. 

The Japanese Master Behind Gyu San

Chef Tomo

The man behind these unique dining concepts is Chef Tomoyuki Kiga, who brings his culinary prowess from stints at 2 Michelin-starred restaurants like Ristorante Aso in Daikanyama, Tokyo, and Melisse in Santa Monica, USA.

Carrying with him 14 years of culinary arts experience from around the world, he carves a niche in his attention to detail and focus on creating memorable dishes.
