With many plant-based initiatives popping up here and there as Singaporean’s appetite for meat alternatives grow, Menya Kokoro is celebrating iconic local dishes with a Japanese twist via their new plant-based Laksa Mazesoba!

For those who do not know, Mazesoba means ‘mixed noodles’ in Japanese and is a popular brothless variant of ramen that comes with a wide variety of toppings such as pork belly chashu and is mixed together before eating. Using multigrain flour to make its soba and employing a Japanese water-softening technology to remove the minerals in the water it uses, Menya Kokoro’s thick and chewy noodles are then cooked for seven minutes to achieve the perfect texture.

Innovating for a more sustainable future, Menya Kokoro’s Plant-based Laksa Mazesoba ($14.80) offers vegans, vegetarians and even flexitarians an alternative unlike the usual soup based laksa we get in our local coffeeshops or hawker centres.

Serving a dry version and made with over 10 different spices, this classic Singaporean dish is made with a Japanese twist that is sure to please while presenting a green-er alternative for the eco-conscious warriors, healthy eaters and the curious.

Toppings include plant-based “prawns” and “fishcake” from Growthwell, inari skin, beansprouts, crunchy shredded cucumber, an umami plant-based mincemeat and a flowy onsen egg (diners can also request for the removal of egg for a vegan-friendly bowl).
