From 30 April to 30 June 2025, 21 on Rajah at Aloft Singapore Novena offers a special Thai-inspired buffet. The buffet features over 30 delicious Thai dishes prepared by three chefs.
Special Collaboration Buffet
This special buffet is named “Sedap Mak Mak,” meaning “very delicious.” Executive Chef Melvin Lim teams up with two Thai chefs, Punyapa Jirapot and Sitthipong Kosakon, from Four Points by Sheraton Phuket Patong Beach Resort.
The restaurant is Halal-certified and located at Aloft Singapore Novena’s East Wing. It offers indoor and outdoor seating for more than 150 guests. The atmosphere is lively and welcoming.
Delicious Thai Highlights
The buffet has tasty Thai dishes, including:
- Thai Green Curry with Chicken (Gaeng Keow Wan Gai): Chicken cooked in coconut milk, spices, and herbs.
- Chicken Satay with Peanut Sauce (Satay Gai): Grilled chicken skewers with peanut sauce.
- Thai Basil Beef (Kra Pao Nua): Stir-fried beef with garlic, chilies, and basil.
- Seafood Pad Thai (Pad Thai Talay): Stir-fried noodles with seafood in tamarind sauce.
- Thai Coconut Chicken Soup (Tom Kha Gai): Coconut milk soup with chicken, herbs, and lime.
- Mango Sticky Rice (Khao Neaw Ma Muang): Sweet rice with mango and coconut cream.
Other exciting dishes include deep-fried prawns wrapped in noodles (Goong Sarong) and royal Thai snacks like shrimp wrapped in egg nets (La Tiang). You can also enjoy drinks like hot Thai milk tea and cold lemongrass tea.
