Fire Rice is a pretty new stall in the fried rice scene, having opened recently in December 2021. It’s operated by two ex-Din Tai Fung chefs, Chai Boon Hiong and Tan Wee Peng, who have a combined experience of over 30 years.
They serve an egg fried rice and sambal fried rice range, as well as sides like chicken wings and their signature pork chops. Their restaurant-quality fried rice sells for around $7 each depending on the toppings—a steal considering how some Chinese restaurants sell their fried rice for up to $15!
The Dishes
Pepper Pork Chop Fried Rice
We tried one of their signature dishes, the Pepper Pork Chop Fried Rice ($7), which features an eye-catchingly large pork cutlet over a bed of egg fried rice.
The rice appears much less oily than other versions we’ve seen, but don’t let that mislead you into thinking this is a subpar plate—we were impressed by how well-fried and flavourful it is. You can definitely tell it’s a professional chef behind the wok; the classic combination of egg and fragrant spring onions were in perfect harmony, and the use of Taiwanese pearl rice gave the fried rice a great texture.
The pork chop might not look fatty, but one bite into it will get rid of all your fears of a dry cutlet. It’s very tender without suffering from the artificially-tenderised meat texture and not dry at all—we agreed that this quality was above what you’d normally expect from a coffee shop and could hold its own in a restaurant! It’s simply seasoned with pepper, which goes perfectly with the classic fried rice.
Brown Shimeji Mushroom Shrimp Fried Rice
Although the Brown Shimeji Mushroom Shrimp Fried Rice ($7.50) was from the same egg fried rice range, it tasted quite different thanks to the mushrooms adding another layer of flavour to the dish. Together with the fresh and firm shrimp, this was a refreshing yet satisfying plate of fried rice—as mushroom and vegetable lovers, we enjoyed this the most.
Prawn Paste Chicken Wings
The Prawn Paste Chicken Wings ($1.70 per piece) were freshly fried to order, and we made sure to dig into it quickly so we could try it while it was still hot. Again, this is another well-executed classic—as you can see, the crust was perfectly browned while still keeping the inside juicy!
The prawn paste flavour was delicious, and we couldn’t find any flaw with this side dish. We definitely recommend you to get this alongside your fried rice—you won’t regret it.
