In Singapore, home bakers are having great success especially during this time of Pandemic. While some have found success in the real world, others are cranking out unusual bakes and innovative delicacies from the comfort of their own homes. Check out this list for some unique finds.

Michelle Tong, a home baker, incorporates the gooey texture of mochi into conventional cupcakes and biscuits. The outcome is the lava mochi brownie, which is one of Gaily Bakes’ most popular items. A molten core made bittersweet Bailey’s dark chocolate, doubly delicious Nutella and Kinder Bueno, and gooey Biscoff biscuit butter is hidden within each springy brownie ($28.80 for tasting box). Michelle now experiments with different flavours and provides sample boxes (around $25 depending on the box) with a rotating menu of delectable goodies.

Miss Van Dough specialises in baked goods that look as beautiful as they taste. Sesame cookie bars ($30), fudgy brownies ($30), and pandan biscoff tarts ($25) are just a few of her most popular delights. Expect customised bundles ($40) with a rotating selection of sweet delights, such as large cookies, brownies, tiramisu, and other confections. Keep an eye on Instagram for updates as these sets sell out rapidly, so the first to get them are the ones with the fastest fingers, so be quick.

The only thing on the menu is a burned cheesecake ($60) with a golden-brown top and a sticky centre. And it’s obvious to why the only have this one item, when you look at these luscious masterpieces. Each seven-inch cheesecake, which serves seven people, is made using Halal ingredients by this Muslim-owned home bakery. The fact that the only available slots to order starts from August when it’s so early in the month only adds to the allure of these delicious delights.

After seeing the exquisite, French-inspired bakes from this bakery, you might believe in love at first sight. Their best-seller is a beautiful package ($22) containing Roku gin-glazed matcha and yuzu madeleines, pickled cherry blossom financiers, and masala chai and Valrhona chocolate financiers. Heartland Sourdough

Redhill rye ($10) and Commonwealth cheddar loaf ($15) are just a few of the unique bakes that Heartland Sourdough has produced and named after distinct Singapore neighbourhoods. Greg Yap and Lim Tjie Siew, co-founders of their online bakery, use local history to make Singapore-inspired bread. For a nutty kick, try Sembawang sesame (from $10), which is made with a combination of stoneground white and whole grain flour and slow-roasted black and white sesame or Leonie Longan (from $15), which is sweetened with Thai dried longans and red dates and is reminiscent of a sweet tea popular during Chinese New Year.
