At his ninth concept store, ramen master chef Keisuke Takeda goes to Hokkaido for inspiration. Sapporo Misono, located at Millenia Walk, serves Hokkaido-style bowls with newly produced side dishes and limited-edition desserts.
Miso ramen ($12.90) is created with fermented bean paste that has been marinated for five to seven days before being combined with unique Sapporo noodles that have also been aged for a few days to give it a chewier texture. Choose the dish topped with corn and butter ($17.90) for the ultimate indulgence.

The God Fire Ramen (from $13.50) is Hakata Ikkousha Ramen’s most popular dish, especially for those who like a challenge. Choose from Spicy Lv.1 / Lv.2 / Lv.3 / Lv.4 to test your spice tolerance levels if you dare.
All of the Hakata-style ramen bowls are made with good, thin, springy noodles blanched for only 15 seconds and served with a pure pork broth and a superbly flavourful egg. The Tonkotsu Mentaiko (from $13.50) sees IKKOUSHA’s creamy pork broth mixed with mentaiko flavor that is just a pure burst of umami in your mouth.

The original Konjiki Hototogisu location in Shibuya, Japan, has only eight chairs. People however still flock to this tiny cafe for its broth, which has been given a star in the Tokyo Michelin Guide 2019 and the Tokyo Michelin Bib Gourmand for four years in a row from 2015 to 2018.
Thankfully, getting a bowl of this award-winning ramen is easier in Singapore. The Shio Hamaguri Ramen ($14.90) at CHIJMES combines clams and truffles to flavour the soup, which is deceptively transparent yet packed with depth and richness.

Menbaka Fire Ramen, is known for their hot bowls of noodles. We mean it when we say that as Japanese green onion oil is utilized to generate towering flames that are poured over your bowl of ramen for a show stopping spectacular.
As such, you get a theatrical bowl of noodles with a broth infused with a seductive kiss of smoke. Try their Shoyu Fire Ramen ($17.90), which is created with a five-hour-brewed broth of chicken, mackerel, and bonito.

Afuri is a well-known ramen chain that needs no further explanation. Named after Mount Afuri in Kanagawa Prefecture, Japan, it delivers the trademark yuzu-scented chicken broth ramen to our shores.
Get the classic yuzu shio ramen ($15.90) with thin whole-grain noodles topped with bamboo shoots, mizuna or Japanese mustard greens, pork belly, egg, and nori for a light, delicate flavour. If not, the yuzu tsukemen ($15.90) has thicker noodles that are dipped in a zesty dipping sauce for a bigger yuzu punch.
