Deep-Fried Yunnan Potato – This dish is a popular specialty snack in the region with its spicy, punchy, and satisfying, potatoes lightly seasoned to let their starchy sweetness shine through then deep-fried to addictively crispy bites.
Rice Noodles with Minced Pork – A Yunnan daily staple that can be eaten during the day or night, thanks to its springy rice noodles thoroughly fragranced with minced pork and comforting pork broth.
Hotplate Bursting Tofu with Spicy Garlic Sauce – The famed Yunnan milky tofu is cooked in the same way it has been for over 400 years since the Qing Dynasty, that sees the outer skin fried to a crisp brown and served drenched in a specially concocted spicy garlic seafood sauce. Each bite reveals pillowy soft tofu within, a tenderness achievable only with the use of Shiping’s unique spring water in its making.
Braised Chicken Noodles with Dried Chilli – Dish native to Yong Ping, Dali for over hundreds of years. The chicken meat is braised with Yunnan chilli and potatoes for 30 minutes before serving with crispy noodles.
