Kurohanabi, Hokkaido’s motsu nabe speciality restaurant, prepares meaty Wagyu motsu (or innards) in a seething hotpot of its legendary sesame miso flavor soup! This one-of-a-kind experience is now available in Singapore at Suntec City, among other Wagyu motsu meals such as okonomiyaki and yaki soba.
New motsu dishes include Hokkaido Motsu Nabe, Motsu Okonomiyaki, and Wagyu Motsu Yakisoba. For the finest flavour, the Wagyu innards are simmered and sweetened with a variety of fresh vegetables in Kurohanabi’s trademark sesame miso soup.
Kurohanabi, founded in Hokkaido in 2008, aims to expose the flavors and textures of Wagyu offal and innards as a stand-alone cut. The restaurant transforms them into flavorful soups and stews using its unique sesame miso soup base, which delicately perfumes and sweetens the beef innards with a range of fresh vegetables. As the soup simmer, the fats from the beef intestines complement with the sweetness of the vegetables to create the greatest flavors possible.
Beginning with the appetisers, the Kamo Hanabi ($14.80) pan-fries a complete duck breast before marinating it in a house-made sauce at 70-75 degrees while repeatedly flipped for thorough flavor penetration. Serving alongside a drizzle of signature sauce that is Kurohanabi’s house specialty.
The Hokkaido Motsu Nabe ($32) is the most traditional method to experience the tastiest beef motsu innards. Kurohanabi’s unique sesame miso soup base is used in this famous hotpot meal, in which beef intestines, tofu, chives, cabbage, and enoki mushroom simmer to incredible sweetness. As the soup cooks, the lipids from the cattle intestines melt into the soup, giving in the greatest flavours possible.
It’s also available as a Natto Motsu Nabe ($42), which is infused with the earthy flavours of natto-fermented soybeans. This soup adds intricacy to the motsu innards for further enjoyment. Personally, the soup was superb and it is definitely the highlight of the restaurant itself.
The flavours of the soup complements each other with a distinct taste of savoury and sweetness. The uniqueness of the dish was a stand out alone, along with the addition of sesame seeds which further enhance the savouriness of the dish.
The Motsu Okonomiyaki ($19.80) adds meaty intestinal fortitude to fluffy okonomiyaki, a classic street snack comprised of eggs, seafood, and onions that sizzles to pleasure on an iron griddle itself. The lipids from the beef intestine melt into the okonomiyaki, which is enhanced by Kurohanabi’s drizzle of unique okonomiyaki sauce and mayonnaise.
The dish has the resemblance of a delicious takoyaki that you’d get in Japan. The dish contains vitamins B and vitamin A that are good for fatigue recovery, as well as minerals such as iron and zinc, and is rich in nutrients important for the body, such as normal vision and immunity. The typical teppanyaki staple of thick noodles cooked in a savory rich sauce with your choice of meat and shellfish.
This dish is boosted with additional lashings of wagyu beef pieces and innards for a dish that scores high on the flavor, texture, and satiation scale. This Japanese noodle stir-fry dish is elevated by the melts-in-your-mouth Wagyu strip steak while the noodles are stir fried with sliced onion, carrots, cabbage.
As for the drinks, Kurohanabi has a wide range of drinks. to enhance your dinner, each carefully chosen to suit the flavors of each dish. Cocktail enthusiasts will appreciate the new collection of Hokkaido distinctive shochu drinks.
Each glass comes with your choice of fruit (tomato, lemon and orange), shochu, syrup, and soda, and is ideal to start the day or cleanse the palette after a meal. The drinks was absolutely refreshing with the scent of fruits and lingering taste.
