Parma ham and Gouda Cheese roll
Ingredients:
- 8 slices of Citterio Parma ham
- 50g pack Wild Rocket
- 150g Smilla Gouda Sliced Cheese
- 240g pack Sun-Dried Tomatoes or sliced tomato
- 1tbsp Balsamic Vinegar Glaze
Method:
- Lay a piece of Parma ham on a board, add a few wild rocket leaves, sliced gouda cheese and a piece of sun-dried tomato or sliced tomato, season and roll into a neat wrap.
- Repeat the wrapping with the remaining Parma ham slices and ingredients.
- Place on a platter drizzled with balsamic glaze and serve immediately or chill for a few hours until ready to serve.

Parma Ham and Mozzarella Toast
Ingredients
- 8 slices of Bread, roughly 1cm thick
- 200g Smilla Mozzarella (Shredded)
- 8 slices of Citterio Parma Ham
- 50g Baby Spinach, finely chopped
- 1 tablespoon of Butter
Sauce:
- 4 tbsp Ketchup
- 2 tbsp Mayonnaise
Method:
- Combine the sauce ingredients in a small bowl, season with black pepper, then spread a thin layer of the mixture on to each slice of bread.
- Pan-grill the bread slices (relish side up) until browned. Remove from the pan. Add cheese to each sliced bread, then layer with ham, followed by the spinach. Season with black pepper. Sandwich the bread on the pan with the remaining bread.
- Melt the butter in a large, lidded frying pan over a medium-low heat. Add the two sandwiches and cover the pan with the lid. Cook for 7-10 mins, then flip and cook for a further 7-10 mins, until the cheese is melted. Repeat with the remaining sandwiches and serve immediately.

Parma Ham and Edam Cheese Puff
Ingredients:
- 1 cup Water
- 1⁄3 cup Butter
- 1⁄2 teaspoon Salt
- 1 cup Flour
- 5 Eggs
- 1 1⁄2 cups Smilla Edam Cheese (shredded)
- 1 cup Citterio Parma Ham, chopped
- 1⁄4 teaspoon Mustard
Method:
- Preheat oven to 200 degrees Celsius.
- Combine water, butter, and salt in a saucepan and bring to a boil.
- Add all the flour into the hot saucepan over the stove, stir vigorously until the batter leaves the sides of the pan and a ball of paste forms.
- Remove from heat and allow to cool for about a minute.
- Add eggs, one at a time, and beat vigorously until the dough is smooth.
- Stir in cheese, ham and mustard.
- Place heaping teaspoonfuls of the mixture onto a lightly greased baking sheet.
- Bake for 15 to 20 minutes until firm and golden.

Parma Ham and Cheddar Cheese Puff Stick
Ingredients:
- 1sheet of Pre-Rolled Puff Pastry
- 4-5slices Citterio Parma Ham
- 5 cups / 150g Smilla Cheddar (Shredded)
- 1 Egg, beaten (for egg wash)
- Black Pepper, to taste
Method:
- Unroll your puff pastry and set it straight on a baking sheet.
- Evenly space out your cheese and push it down with your hands to flatten. Sprinkle with black pepper, then evenly space out your slices of Parma ham.
- Take a sharp knife and cut it into 1-inch strips. Space out the strips, then twist them a couple of times.
- Brush the exterior of the puff pastry with egg wash, then pop the sticks into the oven for 15-20 mins or until golden and crispy.

Asparagus, Mozzarella and Parma Ham Parcels
Ingredients:
- 16 spears Asparagus (trimmed)
- 125g Smilla Mozzarella (shredded)
- 8-12 slices Citterio Parma Ham
- 3 tbsp Olive Oil (and a small amount for cooking)
- 1 tbsp Balsamic vinegar
- Salad Leaves, to serve
- A small bunch of Basil, finely shredded (Optional)
Method:
- Blanch the asparagus in salted water, then spread the mozzarella on top of two spears of the asparagus. Top it with two more spears, then wrap the asparagus in the ham so the mozzarella is encased (you will need 2 or 3 strips).
- Add olive oil to the pan, then fry the parcels until the ham has crisped up and the mozzarella oozes.
- Whisk together three tablespoons of olive oil and vinegar. Add the basil. Serve each parcel with salad leaves and drizzle a small amount of dressing.
