Appetisers

Honey Glazed Bacon Wrapped Smokies
Ingredients
- 36 Mini Sausages
- 12 slices of bacon, cut into thirds
- 1/2 cup Huiji honey
- 1/2 cup light brown sugar
- 1 tbsp water
- 1/4 tsp ground cayenne pepper
Method
- Preheat the air fryer to 190°C and line a baking sheet with parchment paper. Set aside.
- Wrap each sausage with a piece of bacon and secure with a toothpick.
- Whisk together Huiji honey, brown sugar, water, and cayenne pepper until well mixed. Brush it on top of the sausages with a basting brush.
- Air fry for 5 minutes.
- Flip and brush the other side with any remaining glaze.
- Air fry for another 5 minutes. Start checking the doneness and crispiness at around the 3-minute mark.
- Remove from the oven and let the smokies cool slightly before removing the toothpicks, if removing, or serve warm with toothpicks for serving

Caramelised Honey Baked Brie
Ingredients
- 1 ounce wheel of brie
- 1 tbsp Huiji honey
- 1 pinch of chili flakes
- 1-2 sprigs fresh thyme
- Sea salt and black pepper to taste
- Crackers / Nuts of your choice
Method
- Preheat the oven to 180°C
- Unwrap the brie and place it in a baking dish. Cut the brie on top in a crosshatch pattern, and drizzle with Huiji honey.
- Take a sprig of thyme, strip away the leaves and sprinkle over the brie.
- Sprinkle with chili flakes, season with sea salt and optional black pepper.
- Bake in the oven for 12 – 15 minutes.
- Remove from the oven, and serve with crackers or nuts.
Mains

Honey Garlic Pork Chops
Ingredients
- 430g centre-cut boneless pork chops
- Salt
- Ground black pepper
- 1 tbsp vegetable oil
- 2 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tsp chopped Italian parsley, for garnishing
Honey Sauce
- 2 1/2 tbsp Huiji honey
- 2 tbsp warm water
- 1/4 tsp salt
- 1/2 tsp apple cider vinegar
- 3 dashes cayenne pepper
Method
- Season the pork chops with salt and ground black pepper. Mix all the ingredients in the Honey Garlic Sauce together. Stir to combine well.
- Heat up a cast-iron skillet over high heat. Add the vegetable oil and 1 tbsp of the butter.
- Add the pork chops to the skillet and pan-fry each side of the pork, for 3 to 4 minutes each, or until the surface turns brown. Flip over to the other side and repeat.
- Add the remaining butter. Add the garlic and sauté until they turn light brown. Add the Honey Garlic Sauce, cook to reduce the sauce to a thicker consistency. Spoon the sauce over the pork chops.
- Turn off the heat, garnish with the parsley and serve

Honey Glazed Roast Chicken
Ingredients
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon smoked paprika
- Kosher salt and freshly ground black pepper
- One 4-pound whole chicken, rinsed, dried and giblets removed
- 3 sprigs fresh rosemary
- 1 lemon, sliced
Method
- Preheat the oven to 180°C and adjust the racks to the center of the oven.
- Mix together the honey, olive oil, cinnamon, smoked paprika and some salt and pepper in a small bowl.
- Sprinkle the cavity of the chicken with salt and pepper. Stuff the cavity with the rosemary sprigs and lemon slices. Place the chicken in the V-rack-fitted roasting pan. Sprinkle the outside of the chicken with salt and pepper. Tie the drumsticks together using butcher’s twine. Brush the outside of the chicken with about half of the honey glaze.
- The cooking time is about 1 hour and 30 minutes. Cover with aluminium foil if the chicken skin turns brown and continue cooking. (*The exact cooking time will vary depending on the size of your chicken). Make sure juice runs clear before serving.
Desserts / Beverages

Honey Cookies
Ingredients
- 1 cup unsalted butter room temperature
- 1/2 cup Huiji honey
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 tsp salt
Method
- In a medium-sized mixing bowl, beat butter and honey until thoroughly combined.
- Mix in egg and vanilla extract.
- Mix in flour and salt until just combined.
- Wrap dough with cling wrap and refrigerate for 30 minutes.
- Preheat oven to 162°C.
- Remove dough from the refrigerator and roll out on a floured surface to just over ¼-inch thick. Cut dough into Christmas shapes with cookie cutters.
- Bake for 13 minutes or until the edges of the cookies begin to brown.
- Cool cookies on a cooling rack.

Honey Pear Margarita
Ingredients
- 4 cups pear juice
- 177ml tequila
- 88ml triple sec
- 2 tbsp Huiji honey
- 1 rosemary sprig
- Optional: 1/4 teaspoon cinnamon
Method
- Place ingredients in a container or pitcher and stir well.
- Keep chilled in the refrigerator for at least 1 hour.
- Pour into glasses and enjoy!
