Incorporating his French culinary techniques with his passion for Japanese cuisine, he came up with The Gyu Co’s menu, where every bowl is handmade from scratch to ensure quality and consistency. He even developed an in-house butchery to transform secondary cuts of Australian wagyu such that cost savings can be passed on to customers.
The Gyu Co’s signature dish, the Classic Gyudon (Reg: $9.90), features generous layers of lightly-grilled wagyu beef slices, a bed of sweet onion and cabbage mix, topped with a locally farmed onsen egg. Even their sauces are ALL prepared in-house! The classic sauce is a result of:
- Simmering a medley of vegetables over long hours, which produces a naturally sweet stock
- A secret blend of ingredients that is added to the stock, then aged for a week
- And as a finishing touch, the stock is infused with bonito flakes
Besides elevated Gyudons like the Truffle Foie Gras Gyudon (Reg: $17.90), the menu also extends to other protein options like Mentaiko Rainbow Trout Don (Reg: $12.90) and Chicken Nanban Don ($8.90) which are equally well-received.
What’s more, step into their restaurant and you will notice a variety of fine wines lining the shelves — each specially curated by Wilson, who is also a WSET Level 3 Certified sommelier.
