SUN with MOON Brings Award-Winning Kyushu Flavours to Singapore

SUN with MOON is bringing Japan’s third-largest island to your plate. Their new seasonal menu celebrates Kyushu’s seven prefectures with authentic dishes you won’t find anywhere else.

The menu runs from October 22 to December 16, 2025.

What Makes Kyushu Special?

Kyushu means “9 provinces” in Japanese. Today, it comprises seven unique prefectures. Each region offers distinct flavours shaped by volcanic soil, hot springs, and coastal waters.

The island is famous for more than just ramen. Think award-winning wagyu, black pork, and tropical fruits.

Must-Try Dishes from Each Prefecture

Fukuoka: Gateway to Bold Flavours

Goma Salmon ($18.80) is back by popular demand. Fresh salmon sashimi sits atop a silky onsen egg. The secret? Fragrant sesame seeds and a savoury sauce that’s dangerously addictive.

Squeeze lemon over the fish. Mix in spicy radish paste. Each bite delivers creamy, umami perfection.

The Buri & Shiro-Negi Agodashi Nabe ($26.80) is perfect for sharing. This hotpot uses dried flying fish broth for intense depth. Add yellowtail, tofu, and vegetables at your own pace. Dip the fish in ponzu sauce for a refreshing finish.

Miyazaki: Home of Champion Wagyu

Miyazaki Wagyu has won Japan’s Prime Minister’s Award four times running. That’s Olympic-level beef, literally.

Try the Hotate & Mushroom Miyazaki Wagyu ($23.80). Sweet scallops and earthy mushrooms wrapped in melt-in-your-mouth beef. Teriyaki glaze adds sweetness. Spicy mayo brings heat.

Don’t skip dessert. The Mango Parfait ($13.80) features Miyazaki’s famous “egg of the sun” mangoes. Fresh slices, puree, and sherbet layered with mochi balls and granola. It’s Instagram gold.

Kagoshima: Black Pork Paradise

Kurobuta (black pork) is Kagoshima’s pride. The Kurobuta Kalbi Negi Shioyaki ($18.80) showcases this premium meat perfectly.

Grilled pork belly meets savoury leek-salt sauce. A squeeze of lemon cuts through the richness. Simple yet stunning.

Nagasaki: East Meets West

Nagasaki Hitoshi ($9.80) reimagines prawn toast. Fluffy Japanese shokupan bread is stuffed with minced shrimp paste and whole prawns. Deep-fried until golden and crispy.

This Chinatown specialty balances Japanese and Chinese influences beautifully.

Oita: Comfort Food Central

Tori Gobo Tamago Kamameshi ($25.80) is pure comfort. Rice cooks in a traditional cast-iron pot with chicken, burdock root, and egg.

Shredded nori is added at the table. This keeps it fresh and aromatic.

Oita is also home to over 4,500 hot springs. The prefecture invented tempura chicken, proving their innovation credentials.

Kumamoto: Spicy and Satisfying

Karashi Renkon & Mentaiko Age Harumaki ($13.80) packs a punch. Crispy spring rolls hide crunchy lotus root, spicy cod roe, and Japanese mustard inside.

The addition of barley miso creates complex umami layers. One bite and you’ll understand why locals love this snack.

Saga: Delicate Seafood Stars

Saga’s coastline provides exceptional seafood. The Ika Siewmai ($7.50) tops squid dumplings with soy-marinated salmon roe.

For something heartier, try Zuwaigani Tama Don ($18.80). Sweet snow crab over rice delivers pure ocean flavour.
