Singapore’s First Siphon Ramen | Blending Methods To Create This Unique Dish

Ramen is a dish that Singaporeans know all to well, and we cannot get enough of. So what happens when you combine a unique coffee brewing method with savoury ramen soup? You get a unique soup that packs a flavourful punch!

Ippudo Ramen Singapore has provided diners with the island’s first Siphon Ramen ($22++, $20++ without rice), a method brought over from Japan. In fact, the key inspiration to bring this method over to our sunny island was to allow the Japanese expats in Singapore to get a taste of home due to travel restrictions. But since it is here, Ippudo would also love to spread the uniqueness of Siphon Ramen to the rest of the hungry diners in Singapore as well.

What Is A Siphon?

The Siphon is used mainly to make coffee via the Siphon brewing method. The method was invented by a French housewife and a Scottish marine engineer. The coffee that is produced from the Siphon method is said to have a delicate flavour and tea-like flavour. For more information on the process, you can click here.

Siphon Ramen By Ippudo

For Siphon Ramen, the same method holds true, but instead of coffee grounds, dehydrated seafood stock is used to produce the soup. The seafood stock is made using an age-old method to retain the taste and flavour of the ingredients. It is usually done with “Honbushi” (dried bonito), but Ippudo has elevated this by creating different options to choose from. Diners can pick their seafood stock to be siphoned with chicken broth, these include Saba (Mackerel), Sake (Salmon), Ebi (Shrimp), and Yakiago (Flying Fish).

The 4 broths are generally on the salty side when consumed on its own, but when mixed with the noodles, it blends in and gives a very distinct flavour profile for each dish. We honestly are impressed by the flavour and we highly recommend that you head down to their outlet to try it for yourself 😊.

Siphoning Process At Ippudo Ramen

Once you have ordered your Siphon Ramen, take the chance to witness the Siphon Process happening right in front of your eyes! Diners will be invited to view the siphoning process of their soup if they wish to watch the magic of the broth be delicately incorporated into the stock of your choice. We can honestly say it is an incredibly unique sight and experience!

Siphon Ramen Toppings

The Siphon Ramen at Ippudo is also served with their signature 1.1mm thin ramen noodles, which is extremely springy, and a variety of toppings that can be added to the ramen noodles to add new dimensions of flavour to the dish. The toppings included are Yuzu Kosho, Fresh Baby Spinach, Diced Red Onions, Bamboo Shoots, Spring Onions, and Japanese Fish Cake. We can confidently say that the toppings go extremely well with the noodles and cuts through some of the flavour from the soup, leaving your tastebuds craving for more.

Side Dishes And Drinks

A meal is sometimes never complete without some sides to go with the meal, and we highly recommend their Goma Q ($5.90++). This side dish is basically crunchy cucumber elevated with their Japanese sesame dressing. All we can say is that you should not underestimate this dish, for the freshness and the tanginess from the seasoned cucumbers will open up your palate and refresh your mouth in between bites of ramen.

Ippudo Ramen has also recommended their Dassai Junmai Daiginjo sake ($38++ for 300ml; $80++ for 720ml) to pair with the Siphon Ramen. The sake honestly produces a very fruity flavour and can be classified as a dry sake. However, when paired with the Siphon Ramen, the fruitiness of the sake is enhanced and it cuts through the umami flavours of the ramen.  This leaves your tastebuds surprisingly clean and energised. We would highly recommend you to try this pairing at Ippudo Ramen (only drink if you are of legal drinking age yeah XD).
