You may know Menya Kokoro for their mazesoba (meaning “mixing ramen”), which has been crowned as The Best Mazesoba by Tokyo Ramen of the Year. This year, Menya Kokoro is spicing up their offerings with seasonal tsukesoba specials till 31 July 2022. With Original, Spicy and Mentai variations to choose from, there’ll definitely be a flavour for you.
What is Tsukesoba or Tsukemen?
Tsukesoba, also commonly known as tsukemen, can be literally translated to “dipping noodle”. As the name suggests, this dish serves cold noodles together with a hot thick soup and is eaten by dipping bite-sized portions of the noodle into the soup. Tsukesoba is a very popular dish in Japan commonly enjoyed during the summer season.
Menya Kokoro’s Freshly Made Noodles
Menya Kokoro’s tsukesoba noodles are freshly made inhouse with whole grain wheat flour imported from Japan.
Each tsukesoba serving also has 200g of noodles, which is around 40% more than their ramen or mazesoba noodle servings! Having tried their tsukesoba, I can definitely say it’s very filling and satisfying.
Kokoro Tsukesoba
The Kokoro Tsukesoba ($14.80) is the classic tsukesoba offered by Menya Kokoro. The bowl of cold noodles comes topped with bamboo shoots, cha shu, ajitama (seasoned egg), nori sheets, naruto (surumi fish cake) and yuzu peel. A slice of lime is also provided with the bowl, which you can squeeze over your noodles when you’re two-thirds done for an added refreshing burst of flavour.
The Original sauce is made with mackerel fish powder, a thick tonkotsu broth base and spring onions. The noodles with sauce tastes deeply umami without being too salty, and the tang from the yuzu peel and lime helps cut through the rich sauce, keeping the dish refreshing!
The Spicy version is mixed with a homemade spicy oil that uses Szechuan powder, chilli powder, pepper and spicy oil. It gives the sauce a peppery type of kick that’s just the right level of spice—hot enough that you can enjoy the chilli, but not too spicy that it overwhelms the dish.
Mentai Tsukesoba
The Mentai Tsukesoba ($14.80) replaces the yuzu peels of the original bowl with a rich dollop of mentai and scoop of tobiko! The sauce is also elevated with more mentai, a slab of butter and sesame seeds. The mentai flavour blends perfectly well with the tsukesoba sauce, and thanks to the mentai and butter, this version is much creamier than the Kokoro Tsukesoba!
“Oimeshi”
When you’ve finished your noodles, you can ask for a spoonful of oimeshi (complimentary rice) to soak into the dipping sauce!
