With 4 desserts in this set, start things off with the Pineapple Pink Guava. This pretty in pink tart comes with pineapple confit and pineapple cubes for added texture that is interlaced with a velvety smooth pink guava cremeux for a light and refreshing flavour profile. The addition of coconut mousse to the slight crunch of the coconut dacquoise makes this a perfect summer treat.
Next, move on to the vibrant Kumquat Honey Lemon which consists of kumquat mandarin orange mousse that envelops a honey lemon curd with a base of caramel cremeux and hazelnut crunch. The entire dessert is covered with a kumquat glaze for a glossy finish with a right balance of sweet and sour.
For something a little more unique and sits on the edge of both sweet and savoury, try the unique Sweet Potato Smoked Cheesecake which is made with a graham cracker base, vanilla coconut cream and purple sweet potato puree.
