Singapore is a food destination with a vibrant and dynamic hawker culture. In celebration of the heritage food, IPPUDO is partnering with local hawkers and zi-char stall to showcase traditional hawker flavours to both its local and international patrons through its “A Global Edition: IPPUDO X SG Hawkers” campaign.
Taking six months to ideate and execute, this first-of-its-kind collaboration shines spotlights on truly local homegrown F&B businesses – Da Dong Prawn Noodles, Jin Ji Teochew Braised Duck & Kway Chap, and Keng Eng Kee (KEK) Seafood.
The Hawker Heritage Set features three offerings with the main dish being The Hae Ramen, whose broth is a blend of Da Dong’s prawn soup (#dadongprawnnoodles) currently helmed by Watson Lim and IPPUDO’s signature tonkotsu. Relish the umami note of prawns and the creaminess of the pork-bone soup that paired really well with IPPUDO’s thin noodles when we tried it.
Prawns, deep-fried pork lard, beansprouts, fragrant fried garlic, chives and tamago complete the dish that was not too jelak and we polished off the entire bowl of soup (thumbs up!). Enjoy the ramen two ways: savour the original taste of the soup broth, before adding a side serving of Li Nanxing’s Hae Bee Hiam paste for an added kick.
The Lor Ark Bun comes with Jin Ji’s sliced braised duck and delicious gravy coats the soft and pillowy buns. Jin Ji Teochew Braised Duck & Kway Chap (@jinjimelvinchew) is currently owned by second-generation hawker Melvin Chew and you may know him as the person responsible for setting up Hawkers United FB Closed Group at the start of the pandemic, which encouraged hawkers to go online.
For those who do not like pork, this braised duck version of the ever popular “Kou Rou bao” was tender and the meat was delicious. The ratio of meat to bun was also great as the portion was generous.
The Kopi Chicken Karaage features IPPUDO’s Japanese-style fried chicken thigh that is coated with KEK Seafood’s (@kengengkee) bittersweet coffee sauce. The juicy and aromatic chicken is simply irresistible and was a great appetizing start to our meals.
KEK Seafood’s beginnings began humbly as a small hawker stall circa 1970s. Five decades later, the eatery is helmed by third-generation owners Liew siblings and is recommended in the MICHELIN Guide Singapore.
