Tai Shio Japan
This delicate seafood delight uses clear clam broth simmered with IPPUDO’s signature kaeshi (noodle sauce base). It features juicy Aburi scallops, sous vide chicken breast chashu, bamboo shoots, onions and white leek. Thicker noodles are also served with this ramen for that extra bite!
The Chef’s Special Tai Shio Japan ($19.85) is available exclusively for dine-in only at the Mohamed Sultan IPPUDO outlet.
Maze Soba Taro
Maze soba is a dry ramen that’s said to have originated from Nagoya. The word “maze” means “mix” and the word “soba” means “noodles”, and as this name suggests, you are supposed to mix the bowl together to enjoy the complex mix of umami flavours!
The Maze Soba Taro ($18.90) features a treasure trove of ingredients like aburi diced chashu, marinated minced pork, an onsen egg, bamboo shoots, seaweed, spring onions and white leek! Again, thicker noodles that are around 2mm thick are used in this dish.
The typical bowl full of ramen broth is replaced with a dash of IPPUDO’s signature tonkotsu broth and kaeshi at the base, with bonito powder and Japanese mayo on top.
The Maze Soba Taro is available for dine-in, takeaway and delivery at all IPPUDO outlets except Marina Bay Sands, i12 Katong and Mohamed Sultan.
