An iconic childhood delight, the Ice Kachang Dessert, is reimagined in Fann Wong’s latest creation. The Memories Tart aims to be a sweet nostalgic delight created to commemorate Singapore’s 58th birthday with a fusion of flavours and textures.
The tart’s base consists of a buttery sable, layered with a light and fluffy almond sponge, that is complemented by an aromatic gula melaka cremeux for a toffee-like caramelization.
Red bean puree, chendol jelly, almond bits, and diced attap seeds are then added creating a delightful medley of flavours.
The finishing touch includes rose Chantilly cream that infuses the tart with the traditional floral fragrance of rose syrup commonly found in ice kachang.
The Memories Tart will go on sale beginning 1 August 2023 at 10.30am via Fanntasy Bakes’ website: https://fanntasybakes.com.sg/.
