This autumn, Ginger @ PARKROYAL on Beach Road invites you to embark on a culinary journey to Taiwan with its exclusive dinner-only buffet, “Flavours of Taiwan: A Night Market Feast.” From 1 September to 31 October 2024, diners can indulge in an all-you-can-eat dinner experience featuring over 50 Taiwanese street food classics and premium dishes.
The highlight of this feast is the return of Chef Alan Ho, the President of the Taiwan Chefs Association, who will be showcasing his repertoire of authentic Taiwanese dishes. Chef Alan, an internationally renowned culinary expert and judge with the World Association of Chefs’ Societies (WACS), brings his extensive knowledge of Taiwanese cuisine to this special event. With accolades including a Gold Medal at the 2016 FHA Singapore International Culinary Competition, Chef Alan’s dishes promise to be both delicious and authentic.
Signature Taiwanese Delicacies
One of the standout dishes at this year’s feast is the ‘Bigger-Than-Face’ XXL Crispy Chicken Cutlet. This massive, golden-fried boneless chicken cutlet lives up to its name, offering a portion so large it could easily dwarf your face. Another must-try is the luxurious Black Angus Beef Noodles, a rich and hearty dish that takes Taiwanese beef noodles to the next level.
Seafood lovers will delight in the Taiwan Wok Fried Lobster & Crab, featuring the freshest crustaceans prepared with a distinct Taiwanese flair. Enjoy these premium ingredients in various renditions, such as Braised Lobster with Bitter Gourd, Steamed Lobster with Garlic and Chye Poh, and Sesame Oil Crab Stew.
Oyster mee sua lovers are in for a treat with the Fried Oyster Mee Sua. This dish features a generous serving of silky smooth mee sua, topped with oysters fried to golden perfection for a truly indulgent experience. The tender wheat vermicelli is simmered in a rich, bonito-flavored, egg-thickened soup, creating a delightful umami base. The flavors are further elevated by the plump, juicy oysters, and for those who enjoy a bit of spice, there’s an added kick of chili. Craving more oysters? Pile them on until your bowl overflows!
For those craving classic Taiwanese comfort food, dishes like Lu Rou Fan with Minced Beef, Braised Egg and Pickles, and the premium Chicken Pearl Rice offer a taste of Taiwan’s culinary heritage. The buffet also includes an array of Taiwanese-style hot dishes like Crab with Glutinous Rice, Pan-fried Abalone with Honey Glaze, and Jin San Braised Duck.

The “Flavours of Taiwan” buffet also brings the vibrant energy of Taiwan’s night markets to Singapore with an array of street food favorites. Indulge in Flamed Charred Marbling Beef, Crispy Salted Squid, Grilled Spiced Cuttlefish, and Roasted Whole Lamb Leg, all prepared to perfection.
No Taiwanese feast would be complete without sweet treats and refreshing drinks. Guests can enjoy desserts like Brown Sugar Soya Milk Cake, Caramel Mochi Yam Cup, and Crispy Sweet Potato and Taro Ball, all paired with Free-Flow Bubble Tea, Taiwan’s iconic beverage.

These Taiwanese delicacies are served alongside Ginger’s renowned buffet offerings, featuring a wide variety of cuisines from different ethnicities and cultures, all prepared in a halal-certified kitchen.
