We are all spoiled with options for food in Singapore. There are delicious hawker fares at unbelievable rates, as well as cutting-edge restaurant dining that’s still delicious all over the city. If you want the best of both worlds, check out this list of the best modern Singaporean restaurants.

Willin Low, the godfather of Singapore’s modern cuisine, is known for adding unique items to his menu, such as nasi lemak fried chicken ($12.80) and a fish collagen broth udon ($17.90). Willin’s best-selling dishes are also available at cheap rates in this CBD hideaway. Rice bowls and spaghetti platters start at $15.80 and come with generous portions. The krapow bee tai mak ($17.20), hae bee hiam spaghettini ($17.80), and carbonara linguini with siew yoke ($22.80) are all favourites.

Loof

Loof is more than simply a breezy rooftop bar, it also provides meals that honours Singaporean flavours in a unique manner. Start with the chilli crab waffle fries ($15) for a light appetiser before moving on to specialty main courses like the B.C.M. Grilled Cheese ($18), which is inspired by minced pork noodles (bak chor mee) where pork mince is packed in sourdough cheese toast and toasted till golden.

Alternatively, the Loo Original Ramly ($23) will get your hands messy like a regular Ramly burger. Although the inspiration is a traditional pasar madam dish, the upgrade of Australian beef patty drizzled with secret sedan sauce will have you licking your fingers and asking for more.

Po Restaurant

Po is a collaboration between the Lo & Behold Group and Willin Low the pioneer of modern Singapore cuisine. Po, The Warehouse Hotel’s main restaurant, provides typical local cuisine such as ngoh hiang ($16) and char siew ($20) prepared with quality ingredients like Iberico pork. For a truly unique experience, don’t miss the restaurant’s unique popiah tray (from $32), which allows you to put the dish together your own, exactly like grandma would at home.

Sinpopo Brand Restaurant

When you go inside its location on Joo Chiat Road, resist the urge to glance at its dessert menu, which is all influenced by local flavours. You might be tempted to miss the main courses in favour of the cakes ($8), which are inspired by sweets such as ondeh ondeh, pulut hitam, kueh dadar, and kueh salat.

If you can resist its allure, you’ll be rewarded with unusual dishes like muah chee salad ($12) and baked fish with dao jio crust ($20). It’s not just about the new fusions here. With drinks such as the sng muay pop drink ($5), you will get transported to the past.  Here the best of both worlds is celebrated, the modern and old school, so do give it a shot.

Garang Grill

The Garang Grill loacated at the New Ubin Tampines complex is where smoke-kissed beef gets a Singaporean makeover. Almost everything is prepared on a $16,000 charcoal barbecue that imparts a smokey flavour to the food.

Enjoy rendang nachos ($15) with cheese mayonnaise, crispy pork jowl ($12), and the outstanding Argentinian stripling ($38) with sweet potato mash and slaw are among the highlights many Singaporeans flock here for.
