Introducing the staple of CNY – Yu Sheng. Served as an appetiser, and as a traditional symbolism of “good luck” for the new year, the Yu Sheng includes baby Abalone and Salmon Sashimi drizzled with Soup Restaurant own citrus sauce made from the sweet and refreshing mandarin oranges and plums.
The iconic and quintessential lo hei literally translates to ‘toss-up’, signifying attaining greater heights, prosperity and blessings for the new year.
This season, the restaurant’s revolutionary pen cai, Abalone Collagen Treasure Pot with Cordyceps Flower Soup, takes the spotlight. With 10 lquality ingredients such as 10-head abalone, sea cucumber, fish maw, prawns, roasted pork, lotus root, cabbage, fish curd, broccoli, and braised thick mushrooms that are layered and plated nicely in a bowl, the ingredients are immersed in a mouth-watering, savoury-sweet collagen broth delicately flavoured with cordyceps flowers.
These luxury ingredients are simmered in the collagen-rich broth for more than 2 hours before adding the Cordyceps Flowers, resulting in a hint of subtle sweetness to complement the rich, savoury collagen seafood broth. A dish specially curated for the Lunar New Year.
The Double Boiled Golden Chanterelle Mushroom Soup and Dried Scallop in Chicken Soup is a healthy and nutritious soup that has been twice simmered for 4 hours to extract the nutritional benefits of the specifically obtained mushrooms.
The dish is packed with antioxidant which promotes immunity. The renowned Golden Chanterelle Mushrooms’ woody flavours complement the quality dried scallop and chicken’s sweet umami. The first taste of the soup felt comforting, despite being nutritious, you can hardly taste anything herbal and the soup was absolutely savoury.
Unlike the traditional rice, the Double Happiness Sweet Potato Steamed Rice with Chinese Sausage sees fluffy Jasmine rice steamed with both purple and golden potatoes. Along with the premium Chinese sausage which adds an extra punch of savouriness to the rice itself, each spoonful of rice had a delectable smoky fragrance along with the nutritions and healthiness of the dish.
Ending off the meal on a sweet note, the Osmanthus Citrus Jelly has a crystal-like translucence with wobbly jelly studded with fresh lemon. This is an ideal delicacy that completes the festive feasting on a light and sweet note after a hearty meal. The calming flavour of rock sugar and beautiful floral scents penetrates the Osmanthus jelly and the dessert has a mouth-watering, honeyed, apricot-peachy after taste to it.
Handmade Bounty Bunnies and Longevity BunThe charming fluffy steamed Bounty Bunnies are exquisitely crafted by hand, is handmade for the Chinese Zodiac Year of the Rabbit. They are hand-painted with precision and filled with a pleasantly sweet and creamy red bean paste that is best served warm. The usual Longevity Buns have a sweet and tasty lotus paste filling that is sure to please as well.
