Walking into Cultivate feels like entering a secret sanctuary for the soul. The space is warm, inviting, and lined with towering shelves of books—an intimate nook designed for slow afternoons, meaningful conversations, and food that makes the body feel good.

Whole Roasted Portobello Mushroom ($29)

A vegan “steak” done right—deep, earthy portobello soaked with caramelised onions and bright sumac, set on a creamy butternut mash that makes every bite feel comforting.

Classic Hummus with Za’atar & Orange Oil ($19)

Silky, aromatic, and beautifully balanced. Drizzled with orange-infused oil and paired with crisp gluten-free pita, this dish is a modern nod to Middle Eastern roots.

Caviart ($35)

A standout experience. These plant-based “caviar” pearls made from premium Arbequina olive oil burst with flavours—think mango sweetness, raspberry brightness, and aged Modena balsamic richness. Paired with coconut yoghurt and gluten-free biscuits, it’s luxury in vegan form.

Vegan Earth Bowl ($22)

A nourishing bowl of organic quinoa, tender broccolini, creamy avocado, and a velvety sesame goma dressing. Simple, wholesome, and incredibly satisfying.

Pad Thai Rice Noodles ($35)

A vibrant take on the Thai classic with tofu, beansprouts, fresh chillies, and a well-balanced tamarind sauce. This dish honours the original 1930s recipe while giving it a contemporary plant-based twist.

Isabel is the hotel’s signature bar and brasserie, serving refined French classics with contemporary flair. 👨‍🍳 MEET CHEF GANESH: The Creative Force Behind the Menus

Helming Maxwell Reserve’s culinary program is Executive Chef Ganesh, a hospitality veteran with more than 19 years of international experience. From Michelin-starred kitchens in the United States to prestigious hotels in Abu Dhabi and across India, he brings a refined yet eclectic style shaped by global influences.

A graduate of IHM Bengaluru, Chef Ganesh began his journey with the Taj Group before joining IHG and later Marriott International, where he led culinary teams at JW Marriott Bengaluru, Goa Marriott Resort & Spa, JW Marriott Jaipur, and more. Most recently, he contributed his talents to The Leela Palace Resort & Spa, one of the world’s most celebrated luxury brands.

His philosophy is simple: food should tell a story. Through technique, authenticity, and artistry, he transforms familiar dishes into memorable experiences.

From 17 November 2025, guests can enjoy a special dining experience at Maxwell Reserve. With every main course ordered at Cultivate or Isabel Brasserie, diners receive 50% off any signature dish—across both restaurants.

This means you can start with a vegan Caviart from Cultivate and follow up with a Seared Duck from Isabel. Or pair Pad Thai with Trout Tartare. The experience is flexible, generous, and perfect for sharing.

A HERITAGE EXPERIENCE: MORE THAN JUST A HOTEL

Maxwell Reserve is deeply intertwined with the history of its owners, the Garcha and Bedi families. Artefacts tracing centuries of heritage—from 1709 Java land indentures to antique polo mallets and ceremonial Sikh heirlooms—are displayed throughout the hotel.

The legacy of polo runs especially deep: owner Satinder Garcha is a lifelong player, while his father, Colonel Kuldeep Singh Garcha, was a celebrated captain of India’s National Polo Team and recipient of the prestigious Arjuna Award.
