In the month of October 2023, Chef Carlos Gan from Boeuf and Chef Mohamed Al-Matin from Le Matin Patisserie are jointly presenting a menu that combines bold and savory flavours with sweet and delicate ones.
Showcasing the finest flavours from both restaurants through a selection of six dishes, the Boeuf x Le Matin Sharing Set Menu for 2 ($128++ per set) includes appetizers, main courses, and desserts that blend prime cuts of meat with exquisite French pastries.
Featuring two appetizers to tantalize the taste buds, start with the Wagyu Steak Tartare, made from Boeuf’s premium Australian F1 Wagyu Marble 6 beef, topped with a herb-infused yolk and briny lumpfish caviar.
This flavour and texture explosion is complemented by Le Matin Patisserie’s flaky and buttery sourdough-based croissant for an umami finish.
Following that is the Burratina di Puglia, which offers fresh burratina cheese paired with roasted vine tomatoes, pine nuts for crunch, and a balsamic reduction for a touch of sweet and sour.
Topped with pomegranate for a touch of added sweetness, this is a refreshing salad that will whet your appetite for more.
For the main courses, diners can choose an option of Horseradish Sweet Shrimp Tartine, a seafood delight featuring poached prawns served with a warm beurre noisettes crème fraiche dressing, lumpfish caviar, and Le Matin’s airy sourdough-based croissant.
Alternatively, there is the Filet Mignon Rossini, a hearty dish consisting of a whole Australian Marble 3 tenderloin steak. Cooked to your preferred level of doneness and served with seared foie gras, a drizzle of pepper jus with pickled mustard seeds and laminated brioche feuilletée ties all the flavours together.
Dessert offerings include Chef Al-Matin’s Fromage de Vos Reves, a delightful concoction featuring comte sponge soaked in Reblochon cremeux, enriched with Brillat savarin mousse, and finished with a milk crumble glaze.
Chef Carlos contributes to the dessert selection with the Moelleux au Chocolat, made from Weiss Komele 70% cacao, elevated with Madagascar vanilla and whipped mascarpone.
