The coveted Wagyu beef, just got even better with the launch of Wagyu X at 82 Club St S(069450) in the heart of the CBD. Not just another steakhouse, Wagyu X (read as Wagyu Cross) by Chef Masahiro Takada prides itself in serving up a Hokkaido special Wagyu crossbreed meat not commonly found outside Japan.
Originating from Hokkaido, Japan, and crafted through the combination of Kuroge black Wagyu cows and Aberdeen Angus bulls, this unique Wagyu variety boasts the remarkable marbling of A5 Wagyu and the robust flavor profile of Angus beef.
This exceptional fusion results in a luxurious texture that strikes a perfect balance between the melt-in-your-mouth quality of Wagyu and the savoury juiciness of Angus beef.
As mentioned by Chef Masa, “Wagyu A4 and A5 are immensely popular in Singapore but their richness and fattiness can limit the amount one can enjoy in a single sitting.”
“This exclusive Wagyu crossbreed offers a more balanced option and is prepared with simplicity, seasoned only with a touch of salt to bring out the natural flavours.”
To fully embrace this specialty breed, Wagyu X has curated an exclusive menu, featuring the finest cuts of the crossbreed available in three variations: Wagyu X Sirloin, Wagyu X Ribeye, and Wagyu X Tenderloin.
Available in 250g and 500g servings depending on your choice of cut, the meats are served with a side of roasted garlic, garlic crisps and sea salt.
Guests can also choose from three distinct sauces for pairing: wasabi shoyu, Japanese steak sauce, or ponzu, all crafted from house made beef stock that is enriched with fresh ingredients.
The menu also includes a selection of appetizers and sides to complement the main event. Starters such as Corn Mousse with Uni ($30 for 3 servings) is topped with ikura for a burst of oceanic flavours with its freshness.
The Hokkaido Scallop ($26) on the other hand offers a delightful fusion of Japanese and French influences with capsicum puree and flavoured butter.
Other sides include Matsutake Fries ($12), Roasted Japanese Pumpkin with Walnuts ($12), Creamed Spinach ($12), and tempura options like Mushroom Tempura ($16) and Onion Rings ($12) that is made for sharing.
End things off on a sweet note as dessert lovers can indulge in the house specialty, Tiramisu ($18), or opt for the Burnt Cheesecake with Ice Cream ($18).
The restaurant’s ambiance is characterized by polished wooden tables and chairs, minimalist decor and an open bar offering a curated selection of sakes, wines, and spirits that is great for unwinding after work.
Inspired by the moon, which also serves as decorative lighting within the establishment, their prominent motif symbolizes Wagyu X’s dedication to showcasing the best of Wagyu in a welcoming and unpretentious atmosphere.
