Tendon Kohaku’s Sakura Ebi Seasonal Set Menu brings to the table the Sakura Ebi in two delectable preparation styles – Haru Sakura-Ebi Tendon ($17.80) and Tokyo Curry Udon ($18.80) – These delicious meals are available as ala carte orders or to be completed with tasty side dishes like Chawanmushi and Miso Soup.
The Tempura ingredients consist of Sakura Ebi soft-boiled and fried, mixed with furikake alongside fried tiger ebi, fried Hotaru-ika firefly squid and baby sardine kakiage. There are also vegetables like fried baby corn and fried French beans that bring a sweet crunch, finished off with fried egg.
Tendon Kohaku serves fluffy, fragrant and fresh Nanatsuboshi rice imported from Niseko in Hokkaido. Moreover, Nanatsuboshi rice is the most popular and cultivated rice in Hokkaido!
Tendon Kohaku also cooks up its tempura to be impossibly crispy and light-as-air crunchy using a blend of high-grade sesame cooking oil. The tempura is dipped into Kohaku’s velvety house made secret sauce, available in two flavours — Original Special Sauce and Black Sugar.
How To Enjoy and Experience Ajihen Through Sakura Ebi Dishes
Enjoy the Sakura Ebi Seasonal dishes according to the Japanese concept of Ajihen — the evolution of “change in taste”.
With every meal, set aside your tempura and mix your rice only with the Sakura Ebi toppings for your first flavour wave. Then, break the fried egg into the rice and mix well to enjoy a new depth of flavour, concentrated with the creaminess of the egg. Finally, eat the combination with the tempura for a crispy golden crunch, finishing off with a layer of savouriness that is unmatched.
