Kick things off with the Smoked Salmon & Abalone Yu Sheng (from $98+ for 6pax) to usher in wealth and abundance for the entire family. Served with an assortment of seasonal fruits that includes julienned strawberries and jackfruit, the yusheng is also served with a portion of mango pudding bunnies on the side and adorned with edible flowers.
Instead of the usual plum sauce, Ya Ge has opted for an antioxidant-rich roselle and hawthorn dressing that provides a sweet and sour-ish tang that is not only refreshing on the palate but comes with added health benefits as well. Switch up your usual yusheng for a healthier and fruit forward option that is full of crunch and natural sweetness from the fruits that will not disappoint.
A masterfully-crafted dish brimming with over 18 premium ingredients, Ya Ge’s Fortune Pot Pen Cai (from $348+ for 6pax) features luxe ingredients such as 10-head abalone, fish maw, conpoy, sea cucumber and many more that is braised in premium abalone sauce. Instead of the usual thicken gravy, the chefs here have opted for a light and soup-y alternative that goes great with a bowl of white rice.
An upgrade to the Beggar’s Chicken, the Steamed Fragrant Lotus Leaves Chicken with Pork Belly, Assorted Mushrooms, Chestnuts, Red Dates and Wolfberries ($88.80+) is packed with quality ingredients before being wrapped in lotus leaves, encased in a salt dome and oven baked.
With an earthy aroma and flavour, the chicken meat is tender with a slight herbal fragrance that goes well with the abalone sauce that is used to tie the whole dish together. If you are dining in, watch as the server cracks open the salt dome to reveal the whole chicken layer by layer.
Looks can be deceiving as the Steamed Lotus Leaves Rice with Smoked Duck and Abalone Sauce ($26.80+) is a testament to the great skills of the chefs at Ya Ge. Instead of the usual Chinese sausage or pork, ingredients such as diced chicken and smoked duck are used for a different yet delicious take on this culinary dish.
With a smoky flavour and lots of wok hei, each grain of rice is enhanced by the fragrance of the lotus leave and was probably our favourite dish in the whole meal. As someone who does not eat a lot of rice, this understated gem is a must try in our books.
Other bountiful takeaways and gifts you can bring home for you family to sample includes the Steamed Radish Cake with Conpoy and Chinese Sausage ($26.80+ for 900g), that is crisp on the outside and savoury on the inside or Ya Ge’s gula melaka Golden Ingot Nian Gao ($28.80+) for symbolism and flavour.
Drawing inspiration from the Song Dynasty, Ya Ge’s theme follows a classy celadon, teal and calming neutral palette that make up the interior of the restaurant.
