In the outskirts of the CBD within the industrial Henderson area lies Sonder which provides its customers a two-in-one bakery bistro by day and omakase restaurant by night. Expect a journey of haute cuisine underlined by Euro-Asian flavours with melding elements of Thai, Chinese and local touches as created by Chef Joe Leong.
Bakery Bistro by Day
Bakes and cakes galore will fill the daily display from 12-5pm at Sonder with creations like the Butter Brioche ($2.50) and Flavoured Focaccia ($9) sit alongside items from the viennoiserie carrying butter croissants ($3.50), Kouign Amann ($4), pain au chocolate ($4.50) and a selection of fresh fruit tarts ($8).
Sweets and desserts do not disappoint as well with items like chocolate bonbons ($12 for 6pcs) and our favourite, the lemon meringue tart ($15). Stunning in terms of presentation, the taste is just as great and will whet your appetite for more deliciousness that follows.
Look forward to day specialty items that are available only during the day, like the Beef Pastrami Sourdough Sandwich ($20) and Whole Pork Knuckle by Grandpa Prin ($45) that is perfect for sharing between 2-3 pax.
The pork knuckle has a succulent crackle with each bite, blanketing juicy, tender meat underneath, and the side of fresh vegetables provide a crunch of refreshment, while a sweet and sour Thai dressing livens things up on the flavour front to cut through the fat.
Other items on the lunch menu include classic and interesting dishes like Yellow Pumpkin Soup ($15), Winged Bean Pomelo Salad ($15) and a Risotto with Roulade of Chicken and Spring Onion Pesto ($20).
If you prefer set lunches, Sonder also provides options of two or three courses, priced at $30++ and $45++ respectively. Each comes with fresh breads and three specialty butters – sea salt, kombu and black garlic – and includes an option of coffee or tea.
Course Dinner by Night
Come evening, fixed course menus set the pace, with prices starting from $88++ for four courses. Featuring dishes that borrow the best local flavours from Singapore and reinterpreted into contemporary fine cuisine, these dishes will leave a lasting impression on the mind as well as on the lips.
Standouts include the Risotto with Roulade of Chicken and Spring Onion Pesto which is a reinterpretation of Singapore’s classic chicken rice dish. A creamy risotto and a chicken roulade is complemented with a punchy spring onion pesto that and chilli sauce. The King Tiger Prawn with Scallop Linguine and Lobster Bisque Espuma is a nod to the local prawn noodles with springy scallop linguine and a rich, thick lobster bisque espuma.
For the meat lovers, the Kurobuta Pork Collar is inspired by the ubiquitous Thai street food Moo Ping. Charcoal grilled for smoky layers of decadence, it is served with burnt apple for a dash of fruitiness and a coconut glaze for an extra coat of butteriness that locks all the juices and flavours in.
The dinner menu at Sonder changes every two to three months, and custom menus are available for events and private dinner parties, so keep an eye out for novel interpretations of our local favourites.
