As part of a special showcase and collaboration, Mie Prefecture, Japan, is bringing in premium seafood and ingredients to create a special menu with new dishes that highlight the taste and versatility of their produce. Mie Prefecture’s ingredients are not only used extensively in Japanese food but in French and Italian cuisines as well which will be highlighted and served at Italian restaurant Gary’s!
Located in the Kansai region of Honshu, Mie Prefecture is surrounded by abundant nature including seas and mountains. As such, it has a thriving agriculture and fishing industry. The prefecture is also a tourist attraction, with popular destinations such as Ise Jingu, Iga Ueno Castle, Futamiura Park and the ancient pilgrimage trail Kumano Kodo.
Mie Ise Shrimp — 40cm of sheer indulgence
One of the highlights of Mie Prefecture is the Mie Ise Shrimp, whose size of approximately 40cm rivals that of a lobster. The weight of the heaviest shrimp was recorded to be more than 2kg and is regarded as one of Japan’s finest ingredients. With a natural sweetness that takes centre stage and envelops the palate, the flesh is tender yet firm.
An iteration whipped up by the talented chefs at Gary’s is the Mie Ise Ebi with Ponzu Caviar Sauce. The shrimp is steamed and tossed with a light and tangy ponzu sauce and topped with caviar for an umami flavour. The natural flavours of the seafood is allowed to shine in this dish and would go great when paired with some white wine.
Machiya Miso, a perfect substitute for spicy marinades
Mie Prefecture is also synonymous with a miso culture. Having brought in their spicy Machiya Miso, its versatility allows it to be used in different ways like a marinade substitute for pork, seafood and fish.
The Mie Spicy Miso Cod Fish ($48) uses fresh seafood that is prepared till fork tender with a firm bite and texture similar to that of unagi (eel). When paired with the Machiya Miso, it gives the dish a much-needed spicy kick to elevate the dish to the next level.
Other seafood pairings include the Mie Spicy Miso Octopus that is served with some citrus salsa and capsicum coulis for a play on different flavours. Here, the octopus is slow cooked till tender while still retaining some of its chewy texture that goes well with its tangy and spicy accompaniments.
The highlight of any meal would be a meat platter for sharing amongst friends and family and the Mie Spicy Miso Pork Tomahawk ($78) will not disappoint. Good for sharing amongst 2-3pax, the pork is well marinated and served with baked potatoes, roasted vegetables and garlic wine sauce on the side. The best way to enjoy it however in our opinion would be a light dabbing of flakey sea salt to let the natural flavours of the meat shine through.
Ise udon — silky smooth soft handmade noodles
Ise udon is a type of handmade noodle with a thickness of more than 1 cm and is known for their delicately soft silky-smooth texture for easier digestion. This staple food is served with an Italian twist, as the chefs dole out the Ise Udon with Truffle Cream that lends an enticing aroma.
