Looking for a Japanese twist to the usual high tea offerings? Boyutei is proud to present its first high tea made with ingredients and inspirations called for by the changing winds of the season. Curated by Head Chef Takuya Yamashita of one Michelin-starred Whitegrass, the high tea comprises his favourite tea time otsumami, ranging from sweet to savoury.
For a touch of tradition, the high tea set is priced at $69++ per set for 2 persons and comes served in traditional Japanese jubako (tiered boxes), reminiscent of Japanese osechi ryori (new year) festivities. Available for all-day dining, the set comes with two hot brews where you can take your pick from Chinese teas like Golden Key and Snowflake Dacong, or Japanese teas like Hojicha Karigane or Sakura Smoked.
An Ode to the Seasons through Savoury and Sweet
In true high tea manner, Boyutei’s Japanese Otsumami High Tea sings a symphony that starts off savoury before tailing off strong with sweets. The savoury bites include Unagi Toast that serves grilled eel slices with egg omelette, Japanese cucumber and seaweed on top of an open faced toast; Ebi Katsu with a dollop of homemade chilli sauce; and Somen with Sakura Ebi that pairs perfectly al dente noodles with a tossing of baby shrimp.
The Olive Financier is a pillowy soft cake fragranced with black olives while the Narazuke Cream Cheese in Monaka holds whipped cream cheese in a small boat of light-as-air wafer. Finally, the Bocconcini with Moromi Miso comes on a stick presenting two perfect bites of mozzarella cheeseballs, finished off with a smudging of house-made miso paste.
For a sweet finish that is pretty on both the eyes and lips, the Hojicha Financier balances the earthiness of hojicha tea in a moist cake with sweet icing sugar, while the Sticky Date is a sweet rich pudding off-set with the tartness of raspberry powder. The Tiramisu and handmade Matcha Warabi Mochi, adds an ideal bittersweetness before ending off with Goma Nama Chocolate, a rich chocolate nugget coated with a layer of nutty black sesame.
A Bubbly High Tea with Free-Flow Natural Sparkling Wine

On all weekdays of September, elevate your high tea experience a notch with free-flow natural sparkling wine from 3 – 5pm at a top-up of only $30++ (u.p. $38++) per person. Hailing from the South of France, the Villa Chavin Sparkling Sauvignon Blanc delivers a delicate and complex nosing of white flowers, honey and toasted bread. On the palate, it sips to a crisp and fresh body.
Alternatively, opt for Masumi Junmai Ginjo Shiro sake at $15++ (u.p. $18++) per glass or $70++ (u.p. $88++) per bottle. Soft and silky in the mouth, this sake from Nagano starts off sweet with accents of fresh greens and citrus accents before evolving to a full powerful umami of rice.
